Takeaway and Quick Service Closing Checklist: The Short Version

Quick test: you ran a flat-out Friday. Two hundred orders, a delivery app glitch, the fryer playing up. When the morning shift arrives, what do they know?

In quick service, the pace is the problem. Everything happens fast, so nothing gets written down, and the same problems reappear at the next shift.

Fast service needs a short record

Quick service has no cellar to manage and no dining room to reset. It has volume, speed and a kitchen that has to stay safe.

So the closing report has to be the lightest of all the templates: a few sales figures, a short kitchen section, issues, and a handover. If it takes more than a few minutes, it won't get filled in.

What to track at a takeaway every night

  1. Sales vs target, split by in-store, delivery and collection if you can
  2. Orders and average order value. Busy is orders, profitable is spend per order
  3. Labour. Hours against sales, especially late shifts
  4. Waste and remakes in pounds: dropped orders, wrong orders, expired stock
  5. Food safety. Fridge and freezer temperatures logged, food labelled and dated, surfaces and equipment cleaned
  6. Equipment. Fryers, grills and extraction cleaned or flagged for repair
  7. Issues and actions. Delivery partner problems, complaints, supplier misses
  8. Handover to the next manager. What the next shift walks into

One number worth knowing: 8°C

The UK rule for chilled food is that it must be kept at 8°C or below, and GOV.UK recommends setting your fridge to 5°C or below to allow for fluctuations. A temperature log at close takes seconds and is the first thing a food hygiene officer asks to see.

The part everyone skips: the handover

Quick service teams turn over faster than almost any other trade. The person who closed on Friday may not be there next month, so the knowledge that the walk-in freezer door doesn't seal properly leaves with them.

A written handover keeps it. The delivery app that keeps dropping orders, the fryer thermostat that's drifting, the supplier who short-delivered twice. Each one is a small, recorded fact that saves the next shift from learning the hard way.
